Explore the rich flavours of Eastern Europe in this hands-on Slavic cooking course. You’ll learn to prepare a selection of traditional, savoury recipes from Slovak and surrounding regions, including tender Piroshka and crispy Yugoslavian fried pork dumplings.
Perfect for food lovers eager to expand their culinary repertoire and enjoy a taste of Slavic tradition.
Week 1 Sztrapacska A Hungarian dish, made with potatoes to create a delicate little potato dumplings which are poached then combined with a sheep’s cheese sauce and finished with lardons of bacon, parsley, and dill.
Week 2 Borek A typical Turkish pastry made with feta, spinach, fresh mint and olive oil with filo pastry, using quality butter puff pastry to make a quick evening meal.
Week 3 Piroshka Yugoslavian fried pork dumplings, a Bosnian friend taught me this special and tasty recipe while I worked as a chef in Lucerne, Switzerland. Delicious with Avar or sour cream to serve.
Week 4 Älplermagronen Swiss Alpine Macaroni with apple & ham in a traditional recipe made with quality European pasta, bechamel sauce, roasted apple and artisan sliced ham, finished with fried onion then baked – a comforting weekend meal to share with the family or friends.
With over 30 years of experience as a chef, pastry specialist, recipe developer, food writer and stylist, Tracey brings a rich and diverse culinary background to her teaching. She trained at the Pan Pacific Hotel and AUT before working in pâtisserie, Japanese cuisine, boutique hotels in Switzerland, and hospitality roles across Europe, Australia, and the UK. Returning to New Zealand, she ran her own catering business ‘The Galley designer food co’, providing food for two Americas Cup campaigns on private yachts, styled food for major brands, and wrote recipes for leading magazines including Taste, Healthy Food Guide, Nadia, New Zealand Life & Leisure and Good. Passionate about sharing practical skills and creative confidence, she is an engaging, knowledgeable tutor who loves inspiring home cooks. Tracey enjoys sharing her knowledge, expertise and passion for food. She works as a culinary tutor at PBRS in the city teaching international students how to become chefs.
