    Home Mexican Cuisine

    Come and enjoy four evenings of delicious Mexican food. Tutor Troy will take you on a culinary tour of Mexico, exploring famous dishes from different regions. You'll learn to cook traditional Mexican cuisine full of fragrance and taste, and will enjoy the dishes you prepare each evening.

    Description

    Join us on a journey through Mexico’s culinary landscape and experience the flavours, aromas, spices and the culture of Mexico and its flavourful cuisine.

    Learn to cook authentic dishes from Baja, Oaxaca, Puebla through to the tropical Yucatan and taste them along the way. Discover the roots of Mexican cuisine, the history and traditions behind the dishes, the indigenous ingredients and the way to handle them. 

    You will be cooking authentic Mole Poblano, Chicken Enchiladas, Cochinita Pibil (Yucatecan Mayan Pulled Pork), Fresh Corn Masa made into Tortillas, Huaraches, Tetelas & Panuchos. Salsas (Roja, Avocado Tomatillo Verde, Salsa Macha, Pico de Gallo), Guacamole (traditional Avocado Dip), Baja Fish Tacos, desserts (ChocoFlan) and Agua Fresca (Jamaica and Horchata). 

    You'll learn the recipes, the tips and techniques of Mexican cooking, and you'll get to enjoy the lovely flavours each evening.

    What should I bring?

    A tea towel, and a container for any leftovers. The course fee includes all ingredients but BYO your own Sombrero.

    About your tutor, Troy

    I have built a substantial career in hospitality over the last 25 years and have a wealth of experience working within the restaurants and cafes of Auckland and abroad.  My true passion however lies with travels to Mexico to indulge in their vibrant culture and especially tasting the beautiful, complex cuisine built up over the ages. 

    I enjoy studying the various heritage recipes from various regions of Mexico and have partaken in various cooking school experiences in Oaxaca amongst others to garner further experience in this space. 

    Currently I live out on Auckland’s west coast at Piha where I enjoy surfing, long walks on the beach with fiancé and listening to jazz.
