    Join us for a delicious three-session cooking course dedicated to mastering the art of European soups! From the cool and creamy Vichyssoise to the refreshing Gazpacho and comforting Minestrone, this course will teach you the techniques and flavours that make these iconic soups truly unforgettable. This course will also include how to make delicious accompaniments including Focaccia, Italian Sage Sticks and Gougeres.

    Description

    Join us for a delicious three classes dedicated to mastering the art of European soups! From the cool and creamy Vichyssoise to the refreshing Gazpacho and comforting Minestrone, this course will teach you the techniques and flavours that make these iconic soups truly unforgettable. This course will also include how to make delicious accompaniments including Focaccia, Italian Sage Sticks and Gougeres.

    Throughout the course, you’ll master essential soup-making skills like balancing flavours, creating smooth textures, and making soups that can be served hot or cold. By the end of this course, you’ll have a repertoire of three classic European soups, ready to impress at any occasion. Perfect for home cooks looking to expand their culinary skills or anyone passionate about seasonal, flavourful cooking.

    From France: Vichyssoise – The Classic French Leek and Potato Soup plus French Onion Soup
    Learn to make vichyssoise, the creamy French soup traditionally served cold. We’ll walk you through the process of making this delicate and velvety soup using leeks, potatoes, cream, and a touch of seasoning, perfect for warm weather or as a sophisticated appetiser.  You will also learn to make traditional Gougeres and French Onion soup.

    Gazpacho – Spanish Chilled Tomato Soup and Roast Pumpkin Soup
    Explore the vibrant flavours of Spain with gazpacho, a refreshing chilled soup made with ripe tomatoes, cucumbers, peppers, and a hint of garlic. You’ll learn how to balance the flavours and textures, creating a vibrant, healthy soup ideal for summer dining as well as how to create a rich, velvety pumpkin soup, perfect for colder months. You’ll learn how to blend seasonal spices and ingredients to bring out the natural sweetness of the pumpkin, finishing with a smooth and comforting bowl of goodness.

    From Italy: Rich Tuscan Soup and Minestrone. 
    We will teach you how to create a rich Tuscan soup full of the flavours of Tuscany combining tomatoes and spices and including delicious sage bread sticks.  You will also learn to make a rich traditional minestrone combining pasta, tomatoes and seasonal vegetables and herbs.

    Your course fee includes all ingredients $45.

    What to bring

    A tea towel each evening plus a container or two suitable for transporting soup home.
