    Course outline

    Discover how to transform simple ingredients into beautifully aromatic, gourmet flavoured salts—perfect for gifting or elevating your own home cooking. In this hands-on workshop, you’ll learn to create a selection of vibrant culinary salts, including a zesty citrus blend (ideal with lemon, lime, or even for rimming a margarita glass) and a fragrant rosemary–thyme salt that enhances everything from roast vegetables to grilled meats. You’ll be guided through the essential techniques for making long-lasting flavoured salts, including how to properly dry fruit zest and fresh herbs to preserve their colour, aroma, and shelf life. Along the way, you’ll pick up presentation tips to package your salts beautifully for thoughtful, handmade gifts. By the end of the class, you’ll take home your own custom blends and the know-how to keep experimenting with flavours all year round. Ingredients are vegetarian. 

    What to bring

    Bring a Tea towel and a container for transporting goodies home. An apron if you wish. The cost of all materials/ingredients is included within your course fee.

    About your tutor

    With over 30 years of experience as a chef, pastry specialist, recipe developer, food writer and stylist, Tracey brings a rich and diverse culinary background to her teaching. She trained at the Pan Pacific Hotel and AUT before working in pâtisserie, Japanese cuisine, boutique hotels in Switzerland, and hospitality roles across Europe, Australia, and the UK.
