    Step into the world of elegant French baking in this hands-on French meringue workshop. Perfect for beginners and enthusiastic home bakers alike, this class will guide you through the entire process of creating light, crisp, beautifully filled meringues and macarons from scratch.

    You’ll learn the secrets behind achieving that signature glossy shell, perfect feet, and a smooth, even finish. We’ll cover everything from choosing the right ingredients and mastering the macaronage technique to piping, baking, and whipping up delicious fillings. Along the way, you’ll explore flavour variations, colouring tips, and fool-proof methods for avoiding common mistakes.

    By the end of the course, you’ll take home your own box of handcrafted meringues and macarons—and the knowledge and confidence to recreate them in your own kitchen. Perfect for gifting, celebrations, or simply treating yourself!

    What to bring

    Tea towel, container for transporting goodies home. An apron if you wish. The cost of all food ingredients is included within your course fee.

    About your tutor

    With over 30 years of experience as a chef, pastry specialist, recipe developer, and food stylist, Tracey brings a rich and diverse culinary background to her teaching. She trained at the Pan Pacific Hotel and AUT before working in pâtisserie, Japanese cuisine, boutique hotels in Switzerland, and hospitality roles across Europe, Australia, and the UK. Returning to New Zealand, she ran her own catering business, styled food for major brands, and wrote recipes for leading magazines including Taste, Healthy Food Guide, and Nadia. Passionate about sharing practical skills and creative confidence, she is an engaging, knowledgeable tutor who loves inspiring home cooks.
